I’m committed to suggesting healthy food that is easy to prepare for us busy people, I love this classic recipe from The Hormone Reset Diet because it takes almost no time to prepare. Whip it up before you go to bed and you’ll have a fresh, nutritious and filling non-dairy pudding for breakfast!

Chia seeds contain substantial amounts of omega-3 fatty acids. Recent studies have shown omega-3s to increase insulin sensitivity, one of the underlying issues with regard to hormone imbalance, obesity, and weight gain. Though itty bitty, chia seeds are loaded with nutrients! They are excellent sources of fiber, iron, calcium, and even protein, plus they are considered monounsaturated fats that keep us feeling full so we don’t snack, increase heart health and also protect our brains and bodies from aging. Chia seeds need to be soaked or added to other foods in order to get their full benefits. They are incredibly versatile and add important nutrients to our diets!

Makes 4 servings

1⁄2 cup dry chia seeds
1 cup unsweetened coconut milk 
1 teaspoon stevia powder

Place all ingredients in a jar or other glass container with a tight-fitting lid. Shake vigorously for 1 minute. Refrigerate for at least 2 hours, preferably overnight. Enjoy as a dessert or for breakfast.
